Meal Plan: 6th – 12th November

Each week I share with you my dinner meal plan because sharing is caring & I’m sure any busy mother would appreciate extra meal ideas & healthy recipes.

Now, I do have to mention that I’m not a very good home chef, but I try. I’m also still learning a lot about healthy energy sources (because the topic is so very important to me) however if you can think of any healthier ingredient options or add-ons please do share them in the comments.

So, I had a busy weekend alhamdulillah with family & didn’t meal plan until Monday, which is when I usually shop for the extra ingredients I need. Instead, I’ll be grocery shopping on Tuesday in’sha’Allah.

Monday 6th Nov – Roast Chicken with Vegetables

Because I’m one day behind on my meal planning & didn’t take out any frozen meat on Sunday night our dinner will be a store-bought roast chicken with homemade vegetables. My husband & I love most vegetables, so I’ll be steaming broccoli, cauliflower, carrots & green beans (the last two Mr 9 likes as well).

When I roast my own chicken I normally also roast the vegetables & add potatoes but since I’m not using the oven then today will be a little different.

Tuesday 7th Nov – Beef Stir-fry with Rice

Stirfrys are my quick & easy go-to meal that my whole family enjoys. Sure my kids still pick away at the vegetables but I still like to think that exposing them to these ingredients is one way of getting them used to healthy eating n the future – when veggies are not so “gross”.

This meal is simply beef strips mixed with onions, vegetables, mixed spices (that’s actually what it’s called) & soy sauce then served with rice. It doesn’t take me more than half an hour to make this if I’ve already prepped the vegetables beforehand.

Wednesday 8th Nov – Pasta with Bolognese Sauce

Pasta used to be a meal that I had to make in addition to another meal because the household was divided – some liked it, others didn’t!

Alhamdulillah now (& I don’t know exactly how it happened though I have an idea*) everyone eats it & I get to go back to cooking one meal when it’s pasta day – yay!

*My theory is that the more you expose children or people to certain things, the more they start to think & do the same. So the more I encourage healthy eating, the more my children are interested in healthier choices in’sha’Allah … it works with organising skills too (but that’s another post).

Thursday 9th & Friday 10th Nov – Chicken Stir-fry with Rice

Chicken Stirfry with Rice is super popular in my home alhamdulillah! I sometimes make it 2-3 times per week because it’s quick, easy & I know everybody will eat it.

I make it similar to the beef stir-fry mentioned above, however, sometimes I add some organic tofu (I’m the only one in the house who likes tofu) when I’m not too keen on meat that day, which does happen often, though I’m yet to master any vegetarian meals the family will enjoy, so any suggestions are welcome.

Also, you’ll notice that I’ve got this meal planned for Thursday & Friday & that’s because I won’t have time to cook on Friday so will be making 2 days worth in’sha’Allah.

Saturday 11th & Sunday 12th Nov – Homemade Pizza & Pasties

Since the oven will be on & I don’t have time to cook on Sunday I’ll be making homemade pizza & pasties in’sha’Allah.

The pizzas will use store-bought bases & be of 3 varieties – garlic prawn, cheese & spicy beef & served with garlic bread & salad; whilst the pasties will be beef & vegetable curry also served with a side of salad.

I’d love to know your weekly meal plan so please do share in a comment below.
